Every morning my kids wake up starving and need food immediately! I’m not always ready to make breakfast and the regular options of fruit and Greek yogurt don’t always do the trick to satisfy early morning hunger cravings. Enter these easy, no bake energy bites!
Before I started making these, I was purchasing convenient morning breakfast bars and granola bars. The kids liked them but the nutrition is lacking, with most bars having a surprising amount of processed added sugar. In an effort to control our added sugar and maintain an overall healthy eating lifestyle, I searched for a better early morning option. These no bake energy bites check the boxes with healthy protein from peanut butter, flax, and chia seeds. You can also adjust the sugar quantity and can make these gluten free.
This recipe is so simple to make, with only 6 ingredients and mixing all together in a single bowl. You can also easily customize the recipe to personal preference. For example, I use all natural peanut butter, but I’m sure this recipe can be successful substituting other kinds of nut butters. Or you can try adding chocolate or vanilla protein powder for an added boost of protein to start your day.
First, gather your ingredients and add everything to a large mixing bowl. I like to spray my measuring cup with cooking spray to help the honey slide out more easily.

Thoroughly mix everything together. The mixture should resemble a thick and sticky dough. Try to make sure to incorporate the chocolate chips evenly throughout.

Once everything is mixed together, prepare a medium size baking tray with wax paper. You will now begin to assemble the energy bites by rolling into small balls about 1 inch in diameter. Since the mixture is so sticky, I find it helpful to wet my hands first. This prevent the mixture from sticking to my hands and I form the balls. Line the energy bites on the wax paper with some space in between. I can make around 40 energy bites with this recipe.

Once the energy bites are prepared, I slide the baking sheet in the the freezer for about one hour. You can transport them to a storage container after frozen and no longer sticky to touch. My kids enjoy them straight from the freezer, and the energy bites will last longer (though my kids typically eat these within 2-3 weeks). If you prefer a softer and chewier energy bite, store them in the refrigerator.
