Easy Low Carb Tortilla Pizza

My family loves pizza, but sometimes we need a fast and light option to satisfy our craving. And as much as I love the chewy, delicious texture of homemade pizza dough, I don’t always have the time (or the advanced planning) to make it. Additionally, low carb pizza dough doesn’t always turn out quite right.

My solution to the above challenges is tortilla pizza! Flour tortillas make a great thin crust pizza, perfect in size for individual personalization. Being a taco-loving family, we always have some on hand for an easy weeknight meal. The 6″ tortilla is the perfect size for young children, and they can even help make the tortilla pizza themselves!

In addition to convenience, a tortilla pizza crust is a tasty low carb option. One 6″ flour tortilla has 17 grams for carbohydrates, compared to 30-40 grams found in a typical serving size of pizza crust. For a protein boost, we like to top our pizza with cooked ground beef or shredded chicken. Add in a side salad or sliced veggies and you have a complete, family-friendly meal, that aligns with a healthy eating lifestyle.

To start, preheat your oven to 450 degrees. I like to line a baking sheet with parchment paper for easy clean up, but you can achieve a crisper crust without the parchment paper. Place the tortillas on the baking sheet and prepare your pizza toppings.

Our family loves pepperoni and banana peppers, and my husband prefers adding extra protein like shredded chicken. The beauty of this recipe is that it’s so easy to customize each tortilla pizza.

Bake the pizza for about 15 minutes, when the cheese is melted and slightly browned. Slice into quarters and enjoy!

  • 6" Flour Tortillas
  • Pizza Sauce
  • Mozzarella Cheese
  • Pizza Toppings (pepperoni, olives, chicken, etc.)

Instructions
 

  • Preheat the oven to 450 degrees
  • Line baking sheet with parchment paper (optional)
  • Place tortillas on baking sheet and add desired pizza toppings
  • Bake for 10-15 minutes until cheese is melted and slightly brown
  • Remove from oven, slice, and enjoy!
